I'm having a hard time getting back into the swing of things. We went back to school and work this week and man oh man, I'm tired! So to get me out of my funk, I bring you these... Homemade Pop Tarts!
I had to do it. I've been seeing Homemade Pop Tarts all over Pinterest and I caved. They looked so good! Can you blame me???
Homemade Pop Tarts

- Pie Crust (either refrigerated or homemade)
- jam or jelly or anything else you want to fill them with
- egg white
- 1 cup powdered sugar
- milk to thin the glaze
- course sugar or sprinkles
Roll out your pie crust. Cut into rectangles. I should have cut the top rectangle a little larger than the bottom to make room for the filling.
Put a plop of jelly on your pie crust. We used our Homemade Raspberry Jelly but you can use any kind.
We added some marshmallows and chocolate chips on some of them. Oh mama!
Top with another rectangle of pie crust and seal the edges. I used egg whites to help seal them rather than water (hoping that would work better.) My Pumpkin Kiss Pies burst open when I used water.
Brush with egg white and bake in a 450 degree oven for 7 to 8 minutes (until lightly golden brown.)
Cool on a cooling rack for a couple of minutes.
Pour glaze over the top. We sprinkled ours with sugar crystals - because they needed a little more sugar =o)
I can't even begin to tell you how delicious these were. I loved them!!! The pie crust was flaky and awesome and the jelly inside was perfect.
My kids had some friends over for a sleepover and they wanted theirs filled with marshmallows and milk chocolate chips. Oh sure, these were pretty tasty too =o) But my favorite were the jelly filled. Like little hand pies except better. Since we called them Pop Tarts we got to eat them for breakfast!
